The Low Down on Crash's Kimchi
Kimchi is a traditional Korean dish consisting of different fermented vegetables. It has hundreds, if not thousands, of variations spanning regions, seasons and ingredients. The health benefits of kimchi are endless. They include high doses of probiotics, antioxidants, fiber, as well as Vitamins A, B, C and E. It is also low in calories which helps promote weight loss.
Crash’s Kimchi is fermented from the most commonly used kimchi cabbage, the Napa cabbage. This cabbage is often referred to as the “Chinese cabbage”. It is native to the Beijing Region of China and is very common in East Asian Cuisine.
While Napa cabbage is the foundation of our kimchi, we add a few other vegetables to the mix, including Daikon radish (native to East Asia), Bok Choy (native to China) and carrot (native to southwestern Asia). These veggies are then mixed with a flavorful paste that really gives our kimchi it’s spicy character. This paste, a combination of onion, garlic, ginger, habanero, gochujang (Korean red pepper) and fish sauce, is added to the vegetables and then packed tightly into a traditional fermenting crock for 1-4 weeks.
